As a regional director of operations for Chicago’s Cresco Labs, Lucas Chapman oversees company operations throughout Illinois, Michigan, Massachusetts, and California. In addition to spearheading R&D and quality assurance for this cannabis-infused edibles company, Lucas Chapman ensures that it complies with all relevant state cannabis rules and regulations.
Mr. Chapman’s work with Cresco Labs builds upon an administrative food and beverage career that spans more than a decade. From 2018 to 2019, he served as vice president of operations with Levy Restaurants, a position that placed him in charge of all business activities at Chicago’s various Spiaggia restaurants, including the Michelin Star Spiaggia, the Spiaggia Cafe, and the Spiaggia Coffee Bar. He also managed Spiaggia’s Private Events and Catering division.
Lucas Chapman formerly directed upscale food and beverage delivery for the Chicago locations of both the Public and Ace hotel chains. He got his professional start managing food and beverage and general restaurant operations for the Morgans Hotel Group in both Scottsdale, Arizona, and Las Vegas, Nevada.
